Chocolate Fudge Brownies (Makes 15)

These are the chocolate brownies that i made today. i got the brownie mix from sainsburys when i went shopping with my mum, the only reason i got the mix is because ive never made brownies before.






And all you will need is:-
Brownie mix
1 Medium Egg
75ml Water
30ml Oil
White chocolate chips


How to make :-
  1. Preheat the oven to 180c/350f/gas mark 4 and empty the brownie mix into a bowl and add the egg, water & oil.
  2. Using a spoon and mix together all the ingredients to form a lumpy mixture.
  3. Pour the mixture into a greased and lined square tin.
  4. Bake in the centre of the oven for 25 minutes.
  5. cool in the tin completely, cut into square and serve.

Bailey & White Chocolate Cupcakes. (Makes 14-18)

I made these cupcakes for my mum. which she loves, i said i was going to make these a while ago but i never got round to making them.



And all you will need is:-
175g self raising flour
175g caster sugar
110g butter
2 eggs (beaten)
1 tsp vanilla extract
4 tbsps milk
55g white chocolate chip

Ingredients for icing
2 tbsps Baileys Irish cream
55g butter
175g icing sugar


How to make :-
  1. preheat the oven to 180c/350f/gas mark 4 and line a cupcake baking tray with cupcake liners.
  2. place the flour, caster sugar and butter in a bowl and mix with an electric hand mixer on a medium speed
  3. add the eggs one by one beating well. add the vanilla extract and milk and mix together. fold in the white chocolate chips.
  4. spoon the mixture into the cupcake liner 7, up to about 1/2 full.place in the centre of the oven for 18-20 minutes, remove from the oven and allow to cool for 5-10 minutes. remove the cupcake from the baking tray an place on a wire rack to cool.

Method for icing
  1. Place the butter and baileys in a bowl and beat together, gradually add in the icing sugar, beating the mixture in until smooth and creamy. spread over each of the cooled cakes and leave to set.
