Mega Chocolate Chip Cookies (Makes 12 Large)

These Are The Cookies I Made That Nieces & Nephew Loved. 




And All You Will Need Is:-
225g Butter (soft)
140g Caster Sugar
1 egg yolk (Lightly Beaten)
2tsp Vanilla Extract
225g Plain Flour
55g Cocoa Powder
85g Milk Chocolate Chip
85g White Chocolate Chip
115g Dark Chocolate 
Pinch of salt

How To Make Them:-
  1. Preheat the oven to 190c/375f/gas mark 5
  2. Put the butter and sugar into a bowl and mix well with a wooden spoon, then beat in the egg yolk and vanilla extract.
  3. Sift together the flour & cocoa powder and a pinch of salt into the mixture and add both kinds of chocolate chips and stir until thoroughly combined
  4. Make 12 balls of the mixture, put them on to a baking tray spaced well apart and flatten slightly, press the pieces of dark chocolate into the cookies
  5. Bake for 12-15 Minutes,leave to cool on the baking tray for 5-10 minutes then using a palette knife carefully transfer them to wire rack to cool completely.



Easter Nest Muffins (Makes 12)

These are Easter-nest muffins that i made for a Spring fair i went to on the 22nd April. I made them so they could raise money to buy new toys for the play Center that my Nephews goes to.



And all you will need is:-
170g flour
75g cocoa powder
170g sugar
2 eggs
1tsp baking soda
110g butter
225ml milk
1tsp vanilla
1/2tsp salt

For The Topping
350g milk chocolate
6tbsp butter
285g icing sugar
55ml milk
1tsp vanilla
12 chocolate flake bars
Large pack of mini eggs

How to make:-
  1. Put the cocoa powder, flour, baking soda & salt into a bowl and mix together
  2. Put the sugar, vanilla, eggs & butter into a large bowl and beat together. Add the milk and carefully beat into the flour/cocoa mixture
  3. Spoon the mixture into the cupcake liner, up to about half way full. 
  4. Place them in the oven and bake for 20 minutes. Remove them from the oven and leave to cool for 5-10 minutes. Transfer onto a wire cooling rack to cool completely.
How To Make The Icing:-
  1. Put the milk chocolate & butter into a small bowl and place in a pan of hot water and heat over a medium heat. stirring the chocolate until its melts.
  2. Transfer the mixture to a large bowl and gradually beat in the icing sugar, alternating it with milk. finally stir in the vanilla. spread generously on each of the cooled cupcakes
  3. cut each of the chocolate flake in half and then cut them in half lengthways.
  4. Arrange the pieces of flake around the top of each cupcake giving a nest-like appearance and place 3 mini-eggs in the centre of each nest 

Valentine's Cakes

I made this cake for my mum since i was baking all day and i surprised her with it when she got home from work. you can either have them on top of each other like (a Victoria sponge) or side by side like i did. 

Side by Side

And all you will need is:-
100g Self-Raising Flour
3tbsp Cocoa powder (Only if making chocolate cake)
100g Unsalted Butter
100g Caster Sugar
2 Medium Eggs
1/2 tsp Vanilla Extract
1/2tsp Baking Powder
1-2tbsp Milk

How to make :-
  1. Add all the ingredients into a mixing bowl and mix together. 
  2. keep adding milk until you get a runny mixture.
  3. add the mixture into your heart shape moulds
  4. bake in the oven for 15 minutes at 180o/350f/gas mark 4
