Boiled Fruit Cake

This is my boiled fruit cake. its easy to make and takes 1 hour to cook in the oven. this is a family favourite. i seem to be always making this cake. 


And all you will need is:-
200g mixed fruit
250ml milk
200g sugar
125g butter/margarine
250g self-raising flour
1 egg

How to make:-
  1. Preheat the oven to 160C/315F/Gas mark 3
  2. put the mixed fruit, milk, butter/margarine & sugar into a pan
  3. bring to boil stirring all the time. once it has come to boil turn of the hob and leave to stand for 10 minutes
  4. fold into the flour and mix well, add the egg and mix again
  5. pour into a greased loaf tin and put in the preheated oven for 1 hour.
  6. take out to remove from tin and place on a cooling rack to cool before eating.

Perfect Mini Pizzas (Makes 20)

These are my mini pizza and they are easy to make. they only take 10-15 minutes to cook. this is the little pizza i made today (27th Jan) for my niece



And all you will need is:-
1 tbsp of yeast
250g flour
1 tsp of salt
1 cup of warm water
2 tbsp oil
Tomato Purée
Mozzarella Chesse
Any topping you like

How to make :-

  1. Preheat the oven to 200C/400F/Gas mark 6
  2. Put the flour, yeast, salt,oil & warm water into a large mixing bowl and mix until you get a dough mix
  3. using a rolling pin roll out the pizza dough so its about 2cm (1 in) thick and use a cookie cutter to cut the dough into circles.
  4. spread the tomato purée onto the base then add the mozzarella chesse and any other topping you like
  5. place the mini pizzas into a pre-heated oven for 10-15 minutes or until they are piping hot and the bases are golden brown.

Rainbow Cupcakes (Makes 12 Cupcakes)

These are my rainbow cupcakes. These are a bit tricky to make but fun to do, These only take 15-20 minutes to cook. i got this recipe from http://www.cutoutandkeep.net/projects/rainbow_cupcakes

And all you need to make these is :-
125g Butter
125g Self- raising flour
125g Caster sugar
2 eggs
Vanilla Essence
3 tbsp milk
4 Different food colouring (Red,Blue,Yellow,Pink)
Cupcake cases

How to make:-
  1. Preheat the oven to 200C/400F/Gas mark 6
  2. Beat the sugar & butter together in a large bowl until fluffy & light
  3. Beat in the eggs, adding a little flour each time.
  4. add the vanilla essence and mix, add in the milk and then mix again
  5. divide the mixture into 4 bowls  and add food colouring to each bowl
  6. Remove from the oven and leave to cool for 5-10 minutes. Transfer onto a wire cooling rack to cool completely 
Bowl 1 - Red
Bowl 2 - Blue
Bowl 3 - Yellow
Bowl 4 - Pink

Cook in the oven for 15- 20 minutes

Strawberry and Cream Muffins (Makes 12 Muffins)

These Are my Strawberry & cream muffins. These are easy to make and only took 20-25 minutes to cook and everyone will love them. i made mine in the summer when we had a BBQ and i also made these for going on a family holiday. i got this recipe from http://www.muffinrecipes.co.uk/page33.html

And all you will need is :-
2 Eggs
1tsp Vanilla Extract
280ml Single Cream
200g Sugar
400g Plain Flour
3 tsp Baking Powder
1/2  tsp salt
200g fresh Strawberries

How to make :-
  1. Preheat the oven to 200C/400F/Gas mark 6. Line a Muffin Tray with muffins cases
  2. Place the eggs,Vanilla Extract, Sugar & Cream in a large mixing bowl and beat together until the sugar has dissolve
  3. In another bowl add the Flour, Salt & Baking Powder and mix together
  4. Chop the strawberries into small pieces and mix into the flour. Pour in the liquid mixture and mix together until blended together 
  5. Fill each muffin case to just below the top with the muffin mixture and bake for 20-25 minutes
  6. Remove from the oven and leave to cool for 5-10 minutes. transfer onto a wire cooling rack to cool completely

Jammy Doughnut Cupcakes (Makes 20-24 cupcakes)

These are my Jammy Cupcakes. They are easy to make and only take 20-25 minutes to cook and everyone will love them. i made mine without Nutmeg & Cinnamon. i got this recipe from my cupcake & cookies Cookbook

And all you need to make these is :-
285g Flour
115g Sugar
1 Egg
4 tsps Baking Powder
300ml Milk
75ml Vegetable Oil
Any Fruit Jam
1/2 tsp Nutmeg
1/2 tsp Cinnamon

How to Make:-
  1. Preheat the oven to 180C/350F/ Gas mark 4. Line a cupcake baking tray with cupcake cases.
  2. Place the baking powder, flour, nutmeg, cinnamon in a bowl and mix together.
  3. Place the egg in a large bowl and whisk, Add in the sugar, milk & oil and beat together. add the flour mixture and mix in well
  4. Spoon the mixture into the cupcake cases upto 1/2 full. place a tsp jam on top of each cupcake and then cover with more of the mixture.
  5. Place in the oven and bake for 20 - 25 minutes. 
  6. Remove from the oven and leave to cool for 5-10 minutes. transfer onto a wire cooling rack to cool completely
