All You Need Is:-
450g Butter
450g Caster Sugar
8 eggs
3tsp Vanilla Extract
450g Self-raising Flour
4 tsp baking powder
3tbsp Milk
Jam
gaint cupcake mould
How To Make It:-
- Preheat the oven to 180c/350f/gas mark 4
- Beat the butter and sugar until they are light and fluffy. and then beat the eggs lightly and add them a little at a time
- Add the vanilla to the butter and sugar
- Sift the flour,salt and bicarbonate of soda.
- Alternately stir small quantities of the flour and milk into the mixture and mix until it is all incorporated.
- Divide the cake batter between the pans (bottom & top) leaving plenty of room for the cakes to rise
- Bake in the oven for 50 minutes (This may take up to 1hour 15 minutes
- Allow to cool down before taking it out of the moulds
- Level the top of the cake base, spread with the jam and then sandwich the layer together
