Ella's First Birthday Cakes

These are the cupcakes that i made for my nephew's cousins first birthday party that was today even through Ella's birthday isnt till the (31st) Halloween



And all you need is:-
230g Self -raising flour
230g butter
230g caster sugar
4 eggs


How to make :-
  1. preheat the oven to 180c/350f/gas mark 4 and line a cupcake baking tray with cupcake liners.
  2. place the flour, caster sugar and butter in a bowl and mix with an electric hand mixer on a medium speed
  3. add the eggs one by one beating well. add the vanilla extract and milk and mix together.
  4. spoon the mixture into the cupcake liner 7, up to about 1/2 full.place in the centre of the oven for 12-15 minutes, remove from the oven and allow to cool for 5-10 minutes. remove the cupcake from the baking tray an place on a wire rack to cool.

    Gaint Cupcake

    This is the cake i made for my sisters surprise party tonight. it was really nice






    All You Need Is:-
    450g Butter
    450g Caster Sugar
    8 eggs
    3tsp Vanilla Extract
    450g Self-raising Flour
    4 tsp baking powder
    3tbsp Milk
    Jam
    gaint cupcake mould

    How To Make It:-
    1. Preheat the oven to 180c/350f/gas mark 4
    2. Beat the butter and sugar until they are light and fluffy. and then beat the eggs lightly and add them a little at a time
    3. Add the vanilla to the butter and sugar
    4. Sift the flour,salt and bicarbonate of soda. 
    5. Alternately stir small quantities of the flour and milk into the mixture and mix until it is all incorporated.
    6. Divide the cake batter between the pans (bottom & top) leaving plenty of room for the cakes to rise
    7. Bake in the oven for 50 minutes (This may take up to 1hour 15 minutes
    8. Allow to cool down before taking it out of the moulds
    9. Level the top of the cake base, spread with the jam and then sandwich the layer together

    Pappa Pig Cupcakes With Some Vanilla Icing Cupcakes

    These are the cupcakes that i made a for my little niece since she loves peppa. They are really easy to make. for the topping i put on vanilla icing & Peppa pig topping



    And all you will need is:-
    300g self-raising flour
    100g butter/margarine
    100g caster sugar
    1 egg

    How to make :-

    1. Preheat the oven to 200C/400F/Gas mark 6 & line a muffin/cupcake baking tray with paper case
    2. Put the butter/margarine & flour in a bowl and using your finger tips rub the butter and flour together until the mixture becomes crumbly
    3. add the sugar and mix it in. stir in the egg and then add enough milk to make the mixture creamy
    4. put spoonfuls of the mixture into the paper cases and bake in the oven for 10-15 mins or until they are golden brown, then leave them to cool on a wire rack before decorating. 
    5. For the icing i used an pipe bag and put vanilla icing in the bag


    Halloween Chocolate Covered Apples (Makes 4)

    I Made These With My Niece When She Stayed Over Tonight. We Are Using Dr.Oetker Apple Decorating Kit



    And All You Will Need:-
    4 Apples
    Dr.Oetker Kit Contains:
    Chocolate Buttons
    Black & white Sugar Strands
    Edible Paper Faces
    4 Wooden Lolly Sticks

    How To Make Them:-
    1. Empty The Chocolate Buttons Into a Heat-proof bowl
    2. Eirther Melt The Chocolate Buttons in the microwave for 25 seconds (if necessary follow up with another 10 seconds untill melted) or place the bowl over a saucepan of hot (Not Boiling) water and stir untill melted
    3. Remove the stalks from the apple and push the stick into the top of the apples
    4. Dip each apple into the melted mixture and twist the apple round  to remove any excess
    5. Immediately dip into the white and black stands and decorate with edible paper faces

    Fruit Jelly

    I Made these in the summer and it was really nice

    And All You Will Need:-
    Different Fruit (Strawberry & Raspberry)
    Hartleys Raspberry Jelly Cubes
    100mls Hot Water
    Mould (Any you have)

    How To Make It:-
    1. Dissolve the jelly cubes in a 100ml
    2. Stir the jelly untill completely dissolved then make make up to 570ml (1pt) with cold water (Do This For Each Pack Of Jelly Cubes If You Need To Do Each Pack At A Time)
    3. Pour The Jelly Into The Mould and add the fruit
    4. put into the fridge and level to set.
    Please Note :- This Recipe I Used 3 Packets of jelly because the mould was big.

    Pink & Blue Cupcakes (Makes 15 Cupcakes)

    These are the cakes i made for my niece's 17th Birthday party last month.




    And All You Will Need:-
    110g unsalted butter
    110g golden caster sugar
    110g plain flour
    2 medium eggs
    1 teaspoon baking powder
    Sliverspoon Icing tubes (You can choose any color you like)
    Any little sweets for the top (I used jelly tots)

    How To Make Them:-
    1. Preheat The Oven To 180oc fan/200oc/gas mark 6
    2. Place All the ingredients into a bowl and mix together.
    3. Add the mixture to the paper cases and fill half way
    4. Bake for 17-20 mins untill risen and springy to the touch
    5. Decorate the cakes how you like then eat



    Victoria Sponge

    This is the cake that everyone in my family loves so i always make it for them



    And All You Will Need Is:-
    225g unsalted butter
    225g golden caster sugar
    225g self - raising flour
    2 teaspoons baking powder
    4 Medium eggs
    100ml milk

    For The Filling:-
    150g Strawberry Jam
    180ml Double Cream (whipped)
    Icing Sugar (For Dusting)

    How To Make This Cake:-
    1. Preheat The Oven To 170c Fan/190c/Gas mark 5
    2. Butter two 20cm cake tin 
    3. Place all the cake ingredients in a bowl and mix together
    4. Transfer the mixture from the bowl to the tin, smoothing the surface and bake for 50-55 mins
    5. Take the cakes out of the tin and leave to cool
    6. When the cakes have cool, Jam one side of the cake (bottom) and cream the other and then sandwich them together
    7. Use the icing sugar to dust the top.
